Crab and Shrimp Seafood Bisque

Ingredients

3 tablespoons of unsalted butter

2 tablespoons of finely chopped green onion

2 tablespoons of diced celery

3 tablespoons of all-purpose flour, sifted

2 1/2 cups of whole milk, warmed

1/2 teaspoon of freshly ground black pepper

1 tablespoon of high-quality tomato paste

1 cup of luscious heavy whipping cream

8 ounces of premium crab meat

4 to 8 ounces of small cooked shrimp or a selection of other high-quality seafood

2 tablespoons of sherry wine (optional)

Directions

Melt the butter in a large saucepan over medium heat. Add the finely chopped green onion and diced celery, sautéing until softened.

Incorporate the sifted flour into the butter and vegetable mixture, ensuring a smooth and well-combined consistency. Cook and stir for approximately 2 minutes to develop a subtle roux.

In a separate saucepan, gently warm the whole milk over medium heat, being cautious not to bring it to a boil.

Slowly add the warmed milk to the roux mixture, stirring continuously to prevent lumps. Continue cooking until the mixture thickens to perfection.

Introduce the freshly ground black pepper, high-quality tomato paste, and the sumptuous heavy whipping cream to the thickened mixture. Stir thoroughly to create a velvety, well-seasoned base.

Optionally, for a smoother texture, use a blender or food processor to puree the bisque. Return the mixture to the saucepan.

Gently fold in the premium crab meat, cooked shrimp, and, if desired, the sherry wine. Stir delicately and bring the bisque to a gentle simmer.

Serve this culinary masterpiece immediately, allowing your guests to savor the symphony of flavors.

Use a sieve to sift the flour. Mix this into the butter and vegetables until well combined. Cook and stir for about 2 minutes.

In another saucepan, warm the milk over medium heat.

Stir the warmed milk slowly and continue to cook while stirring until the milk has thickened.

Stir in the freshly ground black pepper, tomato paste, then, the heavy cream.

You can puree the soup if desired using a blender or a food processor. Then, pour it back into the saucepan.

Add in the crab, shrimp, and the sherry. Stir and bring to a simmer.

Serve immediately.
